Billy's Deck is a local family business serving modern Australian cuisine including a range of delicious Italian inspired favourites. We pride ourselves on using fresh local produce and preparing and creating everything on site (no pre-packaged meals or sauces). We also serve great coffee in our licensed premises and are open for breakfast, lunch and dinner. Students on placement at Billy's will have the opportunity to learn the full process of making gravies and red wine ragout, risotto from stocks and raw ingredients - we pride ourselves on our focus on real food here at Billy's and take no short cuts!

Typical Tasks & Duties

Students will begin with basic tasks including; care and use of kitchen equipment, safe food handling and storage, and basic knife skills including different cuts.
Student will then progress to more advanced tasks including butchering, portioning and other food pre-preparation. Finally, students will advance to full cooking methods, and learning how to make a range of meals, including sauces, learning the full process from beginning to end.

Student Requirements

This placement is for students studying a Cert II in Hospitality or similar.

Dress Requirements

Students should wear proper chef's shoes, or at the very least sturdy closed toe shoes suitable for a kitchen environment.
Students should wear chef's whites, or plain black long pants and a white shirt (long or short sleeve).

Special Transport Requirements

Travel form will not be required as all placement hours will be onsite at Billy's.
Placement is close to train and bus access.
